God Bless the Crockpot | My 3 Favorite Crockpot Recipes

It’s fall & for a lot of us, that means hot suppers & comfort foods. AND using the slow cooker more! I have a Pinterest board entitled “God Bless the Crockpot”. I really do! You can view it HERE. The crockpot really can be a wonderful thing. Now I haven’t tried those fancy recipes like making lasagna or even bread in a crockpot, but I do have 3 recipes that are my fav’s & we eat quite often on our menu.

Now I do think there are some crockpot recipes that should just be skipped. Like those ones that have you do a million steps & then throw it in the crockpot to cook for 4 hours. That’s not a real slow cooker recipe! That’s a “This could actually be made in the oven but we’re going to say put it in the crockpot to get your attention” recipe πŸ˜‰ Am I right or am I right?

What I personally like about my 3 Favorite Crockpot recipes is that they all make a ton & can be used in a variety of ways afterwards or even frozen down. I’ll list mine below & then you comment & post yours, deal?

3 Fav Crockpot Recipes

1.) POT ROAST
I know, I know it’s basic but SOOO good & easy!

RECIPE:
Roast
Package of baby carrots
(I use the already peeled & sliced up baby carrots because it makes the meal prep even more easier! And we use the whole bag because we LOVE carrots.) – Package of Onion Soup
A few potatoes (If we have mashed potatoes, I cook them separately)

I put everything in the pot & put it on for 4-6 hours & usually head to church since I make it often on Sundays πŸ™‚ Now the benefit of making mashed potatoes instead of putting them in the crockpot, is we’ll mash a lot & then later in the week have Open Faced Roast Beef Sandwiches πŸ™‚

2.) SLOW COOKER CHICKEN TORTILLA SOUP
Now this recipe I base around Cooking Classy’s soup on her BLOG. I’ll make it exactly like she does & then add chopped up zucchini to give it more veggies. If you want to, you could add even more veggies!

I also shred some cheddar cheese & make sure we have tortilla chips when I serve the soup. We’ll put some of the shredded cheese at the bottom of our empty soup bowls, add soup on top the cheese, then layer with some tortilla chips on the soup & then top the chips off with more shredded cheese! So cheese, soup, chips, more cheese. The cheese melts all nice & is SUPER yummy! Some may want to top off with a bit of sour cream as well πŸ™‚

The soup is very mild & makes PLENTY. I usually keep enough out for 2-3 meals & then freeze the rest down for a later date. Yummy, yummy!

3.) SLOW COOKER CILANTRO LIME CHICKEN
Now this recipe I found on Pinterest when we first got married. I would link back to the original source to give credit, but the main source has been blocked or something SOOO I’ll just copy what my printed recipe says! Thank goodness I did print it because we use it a TON!

RECIPE:
1 (16 ounce) jar salsa
1 (1.25 ounce) package dry taco seasoning mix
1 lime, juiced
3 tablespoons chopped fresh cilantro

3 pounds skinless, boneless chicken breast halves

Put in the slow cooker the chicken breasts and then add coat the salsa, taco seasoning, lime juice & cilantro. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If you want too cook it slower, set it to Low and cook 6 to 8 hours. Shred chicken with forks to serve.

Just like with the soup, I keep out about 2-3 servings of the shredded chicken once it’s done in the fridge for the next few weeks to eat up & freeze the rest. We actually have some frozen right now! You can use the chicken with soft tortilla tacos (put sour cream on the tortilla before putting on the chicken-so yummy!), crunchy tacos, make a taco salad, make chicken tostada’s even!

Nicole & Robin | Engagement Session

Since I don’t photograph weddings, it’s not very often that I get to work with engaged couples. But when I do, it’s SO fun!!! The guy is always trying to get the girl to blush, giggle & there’s a lot of kissing that happens πŸ˜‰ πŸ˜‰ It’s SUCH an incredible season in a couples life & I’m always honored to play a small role in it.

Robin contacted me just days after his beautiful Nicole said YES to him at Starved Rock where he TOTALLY surprised her with a proposal. It was going to be a fun session for me personally because I’ve known Robin from church for the past 7 years & I’ve spent fun times with his family. I’m so happy for Robin that he has found his princess πŸ™‚ During our FaceTime date we had a week before their session, I could see how much Robin loves Nicole & just simply adores her. Robin & Nicole wanted a fall session at Bradley University in Peoria where they met as students at the College of Engineering & it TOTALLY fit them! Gorgeous campus & gorgeous couple.

At one point during the session, Robin took Nicole in his arms & just started dancing with her. It was like I wasn’t even there! Oh what a romantic πŸ™‚ What a couple! I hope you have many, MANY more times of spontaneous dances in your marriage you two!!!

3 of My Favorite Pregnancy Tools | Friday Favorites

I know, I know. This is only my first pregnancy & I’m only 28 weeks. To some of you mommies who have had several pregnancies, I can see the eyebrows lifting as you read this πŸ˜‰ I’m not trying to say I have it all down because I don’t!!! But I really DO have 3 favorite pregnancy “tools”. I seriously do. They’re very simple but they’ve made a huge difference in my daily life since we found out we were expecting Little Wilcox. And if what I share today helps one mommy out, then I’m glad I decided to go ahead & write this post. Plus, I really think these will be my favorite things to use for all my future pregnancies!

First off, my First Favorite “Tool” is my water bottle. I have this Camelbak Water Bottle from Amazon. I have the exact one in the below picture. I love that it’s dishwasher safe, BPA Free, & a 0.75 liter so it holds a pretty good amount of water! I take this thing EVERYWHERE! Church, when I nanny, at sessions- EVER.Y.WHERE. The size is great that it fits in my purse (I have a tall purse πŸ˜‰ ) &Β  in my camera bag.

I had gotten a glass Camelbak & was really enjoying that, UNTIL it got broken while I was nannying one day. When that happened, I was like, No more glass for me until our kids are older! I’m so glad no one was hurt when it was dropped.

Water is like the answer for everything when you’re pregnant. Have swelling? Drink more water. Feeling dehydrated? Drink more water. Need more energy? Water. So yes, I totally recommend in investing in a nice water bottle that is durable, sturdy & that you like!

My Second Favorite “Tool” is my Snoogle.Β Yep, you read that right. A Snoogle! The one thing that gets difficult for basically every mom in their pregnancy is sleeping. It’s harder to get comfortable as your baby bump grows larger. This pillow is AMAZING & has helped me some really decent night sleeps.

I had bought a cheap body pillow at Target first & that immediately went back. I don’t even think I used it one night once I laid down with it once getting it home! It was too large for me & too poofy. I do have friends that have used those, so I guess they work for some people! My friend Holly had gotten a Snoogle for her first pregnancy & I remember seeing it in her room when she was expecting. After the body pillow fail, I text & asked her about her funky looking pillow thing I’d seen at her house & she sent me this link! It was exactly the one I had been eyeing on Amazon & into the Amazon cart it went!

What I like about the Mini Snoogle is that it was half the price of the fullsize Snoogle that you can buy or that you’ll see at Babies R Us. The one I got was the mini & it’s worked REALLY well for me. Another friend of mine purchased the full size & has loved it. So my recommendation is buy one from Amazon & if it doesn’t fit your body, return it & get the other one! Sleep is important while you’re growing your little one!

As you can see I was SUPER EXCITED to get my Snoogle! πŸ˜‰

My Final & FAVORITE OF ALL THREE Tools is my Pregnancy Prayer Journal from Val Marie Paper. Guys, water & sleeping well at night is really important. BUT hands-down this is my favorite item I’ve used through my pregnancy. Life doesn’t stop when you see that positive pregnancy test. In fact, for Eric & I, life has begun to fill up & get even faster it seems! Decisions to make, a nursery to get ready, a pediatrician to choose…the list goes on. It can very easily become overwhelming & plain crazy. But that’s why I LOVE my Pregnancy Prayer Journal SO much. It brings me back to the Main Thing.

The Main Thing friends is that Little Wilcox is raised in a home that gazes at the Lord more then life. Eric & I want our family to be raised with the knowledge & love of Jesus Christ surrounding our little ones. This Pregnancy Prayer Journal has sections to write answered prayer requests, keep track of how I’m feeling, prayers for our Little Wilcox & even a section to record prayers & needs of daddy!

One of my favorite parts of the journal is a section to record names of couples that I know are trying to conceive. Whenever I look through my Journal, I see those names & pray for them & that the Lord would grant their heart’s desire. I’ve already been able to cross off a few names off the list because they’re expecting now too!!!!!! πŸ˜€

I purchased this Journal before we were even expecting. I was buying one for a friend & felt led to buy one for myself as a step of faith that Eric & I would very soon be expecting ourselves. I kept the journal all wrapped up on a shelf & didn’t open it until seeing our positive pregnancy test. It was special moment as I sat in our study on the floor days after our pregnancy test & carefully opened the mailing envelope & brushed my hands across the cover & looked at the blank pages inside. What things would I write in there? What prayers, what anxious thoughts, what fears, what dreams would be recorded? I can say now 28 weeks & counting into this pregnancy, that I SO love this journal. I look at it almost daily & it reminds me that Little Wilcox is a gift from the Lord & that I need to remember the Main Thing.

Really? I mean, really Waverly? Do you not know how BEAUTIFUL you are? Seriously friends. I know I shared with my first preview of this young lady that this lady shines not only from the outside but the inside as well & it’s SO true.

I feel like it was not long ago that Waverly was just coming into Junior High & I was a youth leader at youth group at our church. I watched her & loved her spunk, smile & how she would also get quiet & observe things. Now as a senior, Waverly is a busy girl! She plans on going into nursing & is already pursuing that by being at the hospital several days a week. She has a part time job, is involved in many activities including volunteering at church in nursery & basically whatever else we can get her to say yet too πŸ˜‰ Because she’s just that AH-MAZING. She serves with her whole heart. And I LOVE talking to her! When you talk to her, she listens with her whole self. You feel special when you’re around Waverly Adams.

3 Favorite Ways to Welcome Fall | Friday Favorites

I’ve been wanting to start this blog series for quite a big now & decided why not the first Friday in October?! Each Friday (I plan πŸ˜‰ ) to share some of my favorite things. Whether it’s my favorite pregnancy items (probably next week’s post!), my top 3 favorite podcasts or my 3 favorite things to purchase at Aldi. And as our life changes & Little Wilcox makes his/her appearance, I plan to also share bits of our new family life. I hope you’ll join me here on Friday’s as I share pieces of my life & love.


So kicking off the first Friday of October, today I’m sharing my 3 favorite things to do to start off the fall season!

1. Have a Sister Date with my sister Leah! Every year since we’ve lived here (so like 7 years now? Right Leah?) we’ve gone out to buy little pumpkins, gourds & squashes to decorate our places. I believe the tradition started way back when we were younger & mom & dad would buy us one mini little pumpkins at the grocery store. When we moved here, Leah & I turned it into a sister date & either went to the Downtown Bloomington Farmers Market, Casey’s Floral or Brown’s Produce to purchase our items. (Sidenote, the Farmers Market usually has the cheapest prices but we go to whatever is open when our schedules allow us to meet up.) This year we went to Casey’s & we always couple the date with a Carmel Hot Apple Spice Cider drink from Starbucks!

That leads me into my second favorite way to bring fall alive…

2. Decorate!Β Now I’m all about simplicity & being budget friendly. That’s one of the reasons Leah & I go out to purchase small pumpkins & gourds, we both use those to decorate! (Big pumpkins are expensive!)

I have a few items that I bring out every year, a basket my mom gave me, fall smelling candles & put those around Eric & I’s living room & kitchen. I have a fall bouquet I made up from florals from Dollar Tree & it still looks pretty good after 3 falls! I also use real pinecones (Leah & I hunted for those one year) & have a bowl from Goodwill that I set them in. Since I’m in my 3rd Trimester of my pregnancy, I’ll be keeping it even more simple this year since I don’t want to have too much stuff to clean up when it comes time to PUT UP THE CHRISTMAS TREE!!!

I love decorating for fall & enjoying this season, my favorite season of the year.

3) Music! I LOVE Christmas music. It’s one of my favorite parts of Christmas. Couple years ago Leah & I wondered why someone hadn’t put together “fall” music, Thanksgiving music, you know? My sister & I realized that we kind of did have music that we enjoyed that wasn’t QUITE Christmas music but felt like it was special, needed to be set a part. For example, we love the movie soundtrack for Little Women. It’s not quite Christmast-y but yet, it’s just got a special, warming holiday feel about it.

Since then, both Leah & I have created our own playlists we’ve put together on our own iTunes accounts. I also have one on Spotify entitled “Falling in Love”. I’m posting the link HERE so you too can enjoy it! THIS is the very first song on the playlist & to me it just SCREAMS fall.

My house is not at all ready for fall. In fact, as of writing this a few days before publishing this post, I only have the center piece pictured above set out at our home. I wrote this post to help us all remember that you don’t have to spend a million dollars to make it feel like fall. My little pumpkin guys cost just under $12.00. Maybe for you to make fall come alive in your home is to just open all the windows! Bake a loaf of pumpkin bread!

Fall opens the door to what can be a crazy holiday schedule. It is very important to me to not get all caught up in doing instead of LIVING. Taking intentional steps to make fall alive helps me to remember to take in all that is going on around me & not just look to the holidays.

Pray for the Cure

It was a night like I’d never experienced before. A night of remembrance. A night of solemn hearts. A night of tears. And yet it was a night of joy that comes from the peace that passes all understanding.

I had the honor of photographing Pray for the Cure. Pray for the Cure is a special prayer and music service dedicated to breast cancer survivors, their families, friends, and healthcare providers. As their facebook page states: “Pray for the Cure is sanctioned by Susan G. Komen for the Cure. While it is not a Race for the Cure event, it is meant to precede the Race as a spiritual and emotional care program. Pray for the Cure was first held in Peoria in 2004. The event began in Bloomington-Normal in 2011.” When I arrived at St. John’s Lutheran Church in Bloomington I could feel the celebration & quietness that filled the church as people from all seasons of life gathered together.

It was a night that focused on HEALING, HOPE, LOVE and COURAGE.

The evening was covered by several different forms of media. THIS interview by WEEK HOI-19ABC was one of my favorites.

Handmade prayer squares were made & donated for those attending the event by St. John’s Shawl Ministry.

Jill Savage, breast cancer survivor & founder of Hearts at Home, was the featured guest speaker. As a survivor herself, she was able to share first-hand of how “”It Is Not Well With My Circumstances, But It Is Well With My Soul”. An inspiring message for each individual in the auditorium.

I loved how Jill was able to laugh & share her heart so openly. She was in a room of individuals who had been down the same journey. It was a room that understood & clung to every word she said.

Candles were later lit by those attending to remember someone they knew who had battled cancer.

The Bloomington Area Concert Choir for Homeschoolers led by Mr. Lusk performed a beautiful encouraging song.

One of my personal favorite parts of the night, was when they had individuals stand who had survived cancer. The room was almost electrifying as woman after woman stood to show how many years it had been since their diagnosis. I don’t think there was a dry eye in the room.

Women of Vision shared a song of community entitled “I Need You to Survive”. The lyrics spoke of community & encouragement & how we need each other through trials. All over the room I saw people holding the hands of who they sat next to as they drank in the words.

The evening ended with a word of encouragement & prayer by Rev. Cheree’ Johnson. My father worked alongside Rev. Cheree’ as a chaplain when he was doing his residency program at Advocate BroMenn Medical Center. It was then that I met Rev. Cheree’. Oh how I love her passion & heart SO very much. Rev. Cheree’ serves on the committee that organizes Pray for the Cure. She was how I was connected to the event & I am so grateful.

Another favorite part of the evening was seeing women hug each others necks & engage in conversation after Pray for the Cure was over.

Just like the song the Women of Vision sang said we need each other to survive.

Wilcox | Family Session

I will turn 30 later this year (& proud of it!) & one of the things I like to look back on in life is to see the answers to different prayers I’ve had. I started praying for my future husband at a young age. They weren’t necessarily long prayers with tons of details. Sometimes it was just “Where IS HE God?” πŸ˜‰ That was when I was older πŸ˜‰ But I prayed for him quite often. For his heart, that he would make wise choices & listen to the Lord.

And I’d also pray for his family. And when it came to praying for his family, I for some reason most specifically prayed for his brother.

I just knew my future husband would have a brother. At least one brother. I did imagine him to be the older brother, like older then who I would marry & therefore older then me & could be my “big brother”. But I at least knew in my heart I’d someday get another brother. I also found myself thinking about who my future brother-in-law would marry, who would end up being my sister-in-law & then realized I should probably pray for her too.

And see this is where it gets hard to write a blog post about your own family. Because you start crying. Your eyes well up with tears & you realize that God more then blew away your expectations for who your future in-law family would be. You realize that those prayers for your future big brother were answered in the form of tall, funny & caring Evan Wilcox. And the thoughts & prayers of who would marry that big brother were answered in the form of who was first a friend & then became family, the beautiful Jessica.

My God cares about the little things we desire & long for. He also writes the most incredible stories, if you allow Him too. I know that He just longs to write the most beautiful stories for you my friend & give you things you only thought were just little whispered prayers said at the young age of 14.

The Lord not only wrote the love story that Eric & I have, but He also wrote the love story that Evan & Jessica have. They’ve been married 3 years this past May & then July 27, 2015, that story grew another branch & their family tree became 3. Leora Pearl was born. Their first child. Eric & I’s first niece. She’s a precious gem.

Eric & I traveled to Georgia the beginning of this month & spent a few days with the ‘new’ Wilcox Family & got to meet Leora. One of the evenings we went to a park that they walk at often & had a little mini family photo session.

Jessica, God chose you to be Leora’s mother. No one else could be who she needs or know her like you can. I can’t wait to watch you blossom even more into the wonderful mother that you are daily becoming.

I love to take the parents away from their kids during photo sessions. To snap even just a few photo’s of them together as a couple. Having children & being parents is a wonderful gift. But sometimes you need those visual reminders to remember that first, it was just the two of you. And that marriage relationship needs to be cultivated even with the pitter patter of little feet around the house. This time of our mini photo session was probably my favorite time of the entire evening. And yes, I was brushing away tears taking photo’s of my ‘big brother’ & sista.

Evan, you are the big brother I never had. I’m thankful for you & I’m really excited to watch you be a father to Leora & all the other babies that may come in the future πŸ™‚ I see your love for the Lord & your desire for Him to be the main part of your household. I’m proud of you.

Jessica, you too were an answer to prayer. I think often of how blessed I am to have YOU as my sister-in-law. I do see you as my friend & I love our term we use for each other- “sista”. It is proof that you are more then just a sister-in-law. Your work ethic & your desire to raise your children with what you feel is best, not what society thinks is best, inspires me. I’m still ‘mad’ at your husband for taking you to Georgia πŸ˜‰ but I’m thankful we’ve been able to stay connected. I’m so thankful you’re in my life. I love you!

One of the points of a blog post is to be brief but yet share enough that your audience understands your heart & your point. Well, if I could, this post would be more like a full chapter in a book! I wish I could share each & every image from Emily & Dustin’s maternity session & I’m not joking. When you put together beautiful weather at golden hour, a lovely location & a couple that is just SOOO excited about their growing family- it all adds up to something pretty spectacular.

Emily & Dustin are expecting twin GIRLS sometime in October. When we had our phone date to start the process of working together, Emily & I talked for over an hour. It was so fun to connect with a client who’s also expecting but I was so intrigued by how life is different for them as they are expecting not one, but two babies!!!

I am very much looking forward to these precious princess’s arrival! I’ll be visiting them in their home & having a newborn session with the 4 of them! So be on the lookout for that!!!

I remember the first Sunday I met the Johnson family. It was at our church & Rachel was playing with Tessa outside in the foyer. I was supposed to be taking pictures of something but got distracted when I saw little Tessa & Rachel & went & introduced myself. Ended up finding out they had just moved to the area from Fargo, North Dakota! My mom grew up in the Fargo-Moorhead area & you really don’t meet too many people from there. It was fun to talk to someone who knew that part of the country & compare notes. The Johnson’s began coming to our small group & it’s been fun having them around & being in our community.

I was also super excited when I found out Rachel was expecting!!! We are actually just about 7 weeks a part in our pregnancies & I’m excited to watch the Johnson Family welcome a baby boy sometime in November!!!

It’s super fun for me personally to watch the eldest child in a family as they transition from being the only child to the oldest. I’ve watched this happen with a few of our friends & their families that go from 3 to 4. I love watching the dynamics change. Maybe it’s because I’m the oldest in my family with 3 younger siblings πŸ˜‰ Little Tessa is such a sweetie & I know she’s going to be make a fantastic big sister! She’s already excited about Baby Brother!

Sadly, Jeremiah, Rachel, Tessa & Baby Boy Johnson moved just a few weeks ago from Illinois to Pennsylvania. It’s sad because they’re no longer here & we don’t see them at church or small group BUT it has been a good move for them since they are closer to Rachel’s family & Jeremiah accepted an even better job position. I was really looking forward to our babies playing together but obviously the Lord’s plan is better then my wishes πŸ˜‰

I’m SO glad we got to know them in the year that they were here & I really enjoyed our evening session we had together before they left. Thank goodness for facebook & being able to keep in touch! I look forward to watching from afar as this family of 3 becomes a family of 4!!! Keep in touch Johnson’s & I’m always up to be flown to Pennsylvania for a family session someday πŸ˜‰ We miss you guys!!!

Adkins | life&love Family Session

Couple weeks ago I got an email from Sonyta. She explained to me that their oldest son was going to be in town for the weekend & would it be possible to make a family session happen? Her friend Leah Bond (thanks Leah!) referred me to them & the cool thing was, we already knew each other from a couple years ago!

We quickly decided on a date, time & to have the session at the Adkins home. We did spend most of our time outdoors, but I immediately fell in love with their house. Lots of room & it just felt like HOME. Know what I mean?

The Adkins are BIG on music. From singing, choir, producing music, having their own home studio, playing numerous instruments, I LOVE that Sonyta & Marchan incorporate music in their lives & have passed on this love to their children.

Speaking of their children…each of the kids had such fun personalities! Lundon was in the youth group I helped with back in the day & it was fun seeing him as a grown young man!
